BEEF
Our herd is composed of 3 breeds:
Cows: Red Angus, Galloway and Highland.
Bulls: Red Angus and Galloway.
Crossing breeds make for an excellent
animal. Good browsers,
disease resistant, and climate hardy. We
maintain a closed herd. The
only "imports" are bulls. Calving
season begins later than most other farms. The mothers are able to graze fresh
new grass; which promotes healthy and happy babies. Calves are "fence
line" weaned in late fall. This
creates less stress through winter.
The animals graze on rotating pastures. We also green chop fresh legumes to
augment forage. Winter feed
consists of grass and legume silage. Choice
dry matter hay, and minerals are also furnished.
The only grain we feed is rolled oats. This supplements protein in the diet
for calves and finishing steers. We
use no antibiotics. There
have been no chemical fertilizers on our pastures and hay fields for 3
years. Active pastures are harrowed every 5 days with low impact
equipment. All fields are
core aerated twice a year.
Butchering-
Our butcher is like me, cranky and
careful. Beef is dry aged
for a minimum of 2 weeks. Cuts
are kept simple:

Our animals are raised
with care. Balanced diet with no corn.
All beef is dry
aged for a minimum of 14 days and vacuum wrapped.
Shipping & handling costs $30-$45 depending
on destination. Full box is
about 30 lbs. All products
are vacuum sealed. If there
is partial defrosting, just place in freezer.
